HeLLO, TEAM City BBQ!

I love this time of year. Cooler weather, holidays approaching, and best of all—it’s football season!

This time of year brings out enthusiasm and positive energy in so many. Whether it be their passion for the home team or an excitement around the approaching holidays, it’s a time of year that gives reason for celebration.

It creates so many opportunities for us to put our Purpose to work on so many fronts: serving competition-quality BBQ with backyard hospitality and truly making a difference in the lives of those around us. At City Barbeque, we exist to serve and create happiness—for co-workers and guests alike.

Too often we view our Purpose, core Values, and Guiding Principles as a behavior extended only outward to our guests and communities. That, of course, is mission critical to City BBQ owning the BBQ lane. However, owning the BBQ lane across the nation requires that we all take ownership in first directing those behaviors inward to our fellow team members—to each other. The foundation that will support the scaling of this brand is based on culture, on people, and on teamwork. We must protect it by serving and creating happiness for each other, first and foremost.

I often talk about the difference one person can make on a team and in a business. I have so many examples of how one great person on the team, regardless of position, can be a game changer for everyone around them. As you come to work every day, please arrive with the full and resolute intention to be that person. Make your Joint or your department and team better today than they were the day before—we all own that responsibility. 

Taking an inside-out approach to building our business will result in a happier and stronger team, delivering an unmatched level of backyard hospitality to our guests. With tailgates in full swing, holiday celebrations being planned, and so many people craving the best ‘que available, we have the opportunity to make a lasting impression on so many. Let’s not miss this awesome chance!

Delivering on our Purpose of serving and creating happiness is no more difficult than making the simple decision to do so. The good news is that this is not the responsibility of just one person; we have 2281 team members working every day to make it a reality. That’s 2281 team members to coach each other up and hold each other accountable to doing so—please participate in that.

Four Pillars

TEAM

Have you heard about the Pit Master Program? This is a newly-organized course of training and application that we plan to repeat on an annual basis. In January, an inaugural group of our passionate teammates met in person with OSU associates, to walk through the new program and “get up close and personal” with the process of animal life cycles. In May, they met with Chef Rich to learn the art of Pit Mastery and fire.

In September, five candidates completed the 9-month course: Jeffrey Weegmann, Kenny Gillison, Matt Ferguson, Nick Grdina, and Chris Giles. They participated in a graduation event, competing against each other in a final cooking showdown, which included Ribs, Chicken Legs, Side Dish, and Specialty Dish. OSU sponsored the cook-off, and provided the Judges as well. Preparation took place in the Support Center Test Kitchen under the supervision of Chef Jess Bograd, and the cook-off was held at the Animal Sciences building on the OSU campus. These brave souls were out in the parking lot at 5AM on a Saturday morning, stoking the fires and smoking some amazing personal recipes.

A very special “thank you” goes to Jason Strickland, who worked diligently over the past year to make this program a success. He went on this journey alongside each participant, supporting and encouraging them. Also thanks to Chef Jess, for helping prepare the team for their big day and providing additional insight into spices, flavoring, and tastes!

Take a look at some of the action in the carousel of photos above. We’re also creating a Pit Master Wall/Hall/Walk of Fame at the Support Center, where each year’s graduates and their accomplishments will be on display. Be on the lookout for interviews for next year’s program, too, coming soon!

In each issue over the next few quarters, we will post one of the winning recipes from this event. This quarter, we have Jeff’s Secret Bean recipe - it was the 1st Prize winner in the Sides category!

JEFF’S SECRET BEANS (Shhhhhh! Don’t tell anyone...it’s a secret!)

INGREDIENTS

•2 Tbsp. bacon grease

•1 medium size sweet onion, chopped

•2 each red and orange bell peppers, seeded and chopped

•5 15-ounce cans pork and beans, drained

•1 15-ounce can creamed corn

•1 4-ounce can diced green chilis

•2 Cups cooked, shredded Pork or Beef

•2 Cups sweet BBQ sauce

  OPTION:  Add beer or cola as desired, to taste

DIRECTIONS

•In frying pan, sauté onion and bell peppers in bacon grease.

•Move to stock pot. Add remaining ingredients. Bring to a simmer, and cook for 1 hour.

•Remove from heat and let cool. Place in lidded container and refrigerate. Let sit overnight to develop the most flavor.

•Reheat, serve, and enjoy!

The Marketing team has worked to continue to engage our Guests with our loyalty program, which includes the City BBQ app, special offers and promotions, emails, and push notifications for our Rewards members. We’ve also recently rolled out our new SMS initiative using a company called Attentive, which has resulted in 42,000 active subscribers and over $1 million in revenue.

Process

We are excited to look toward the road ahead when it comes to new menu innovation! Over the last several months, we have been creating, testing and eating a ton of new recipes that are slated to be featured as LTO’s throughout the year. We’ve put together a process to help us understand if new ideas have the potential to succeed, or if they need a bit more work. Any new menu item will get developed and approved through the menu team first. From there it will go live as tests at 3 joints for 6 weeks. During that time, we are looking at overall sales, Joint and Guest feedback, operations, Competition Quality Standards, CSI and more. If a menu item is deemed successful, we’ll put it into the calendar. Testing menu items early helps us plan and forecast appropriately. So keep an eye out - your Joint may become a testing location, and you get to try all the new menu items!

A few items are in test right now, Green Chile Pork Carnitas Tacos, Chocolate Chip Cookie Pudding, and Pumpkin Spice Cheesecake Pudding.

Financial

We are wrapping up the third quarter this week and headed into 2023 planning.   Our numbers continue to exceed our forecast, but we are behind our budget.   Due to the difficulty in getting construction materials, we had to push back our new store builds, causing us to miss budget by about $1.8M.   In addition, the inflationary economy is affecting our Guest discretionary spend and we have noticed a slow down in the number of purchases at the store.  However, Catering is stronger than ever and the number of Catering Guests we are serving offsets this loss of traffic in the stores.  Industry indicators show that Guest traffic is starting to improve across all sectors of the restaurant space.  We have noticed an improvement these last few weeks of September and are expecting a great 4th quarter.

RDO REFLECTIONS

Team,

I know what you are thinking.  “Not another communication about No Fry Left Behind!" Well, you are wrong.  We will be talking about how almost everything we do can be related to this. 

How can that be?  Well, we are responsible for it all, to maximize the product and people in which we invest to grow our business.  Think about the journey of a cow.  From conception to the table, it is a much longer and more expensive journey than that of the potato.  Think about the life cycle of all our proteins.  All that money, work, passion, production, and execution, just for it to go in the trash?  We are accountable for this.  No Brisket Left Behind!

This also goes for people:  No Manager Left Behind.  The journey between resume to functioning manager is expensive.  There is a lot of time, money, and effort put into developing a manager.  It starts with hiring the right person.  We are not just filling positions; we are building our teams. 

Your job is “to serve and create happiness.”  If we want to “set the standard for others to follow,” we must have the lowest possible manager turnover and take advantage of retention.  We are spending too much time putting out fires and not watering the grass.  Every decision we make impacts the future.  We must dig deeper on our current teams and know what the pulse of our managers is at all levels.  Retention is the game changer.

TOP SALES PERFORMERS!

In this addition of Catering Chatter we are recognizing our top sales performers.  If you see these folks please congratulate them. 

  1. Randy Arehart - Columbus, Ohio – Last year Randy broke a record for an individual salesperson by being the first to go over $2M in sales. He is currently crushing this record with a whopping $2,281,487.

  2. Temple Rice – Indianapolis, Indiana – Temple joins the $1M Club for a consecutive year! Her current sales are $1,104,402 and growing.

  3. Ted Simpson – Cincinnati, Ohio – Ted is also a repeat $1M Club Sales Manager. His current sales are $1,046,466 and growing.

  4. Ashlee Silva - Indianapolis, Indiana – Ashlee is the first ever Wedding Event Specialist to hit $1M in wedding sales, what an incredible achievement! Her current sales are $1,034,144 and growing.

These are incredible results!  All of our sales people across the company are working hard and as a team, we are seeing record results in catering sales.  As a group, our Business to Business Sales Managers and Wedding Event Specialists are responsible for nearly $16M in sales so far for 2022.

Do you know about the City Cares Fund?

The idea for City Cares began because our generous teammates were always looking for ways to help their fellow team members when they were going through a rough time.

The City Cares Fund was created in 2018 to help teammates who are facing a financial hardship immediately after a natural disaster or an unforeseen personal hardship. The Fund relies primarily on individual donations from teammates and support from City Barbeque to fund this program. Every contribution helps and when combined with the donations of others can provide a tax-free grant (USA) to help a fellow teammate in need when they are facing the unexpected.

Since its inception, City Cares has awarded over $68,000 to City Barbeque teammates in need!

Grant recipients have reported that receiving grant money from City Cares has helped them:

·        Be better able to focus on their work.

·        Feel less stressed and worried.

·        Avoid late fees on bills.

·        Avoid services or utilities being shut off.

·        Avoid eviction or foreclosure.

The City Barbeque Scholarship Fund began in 2006 as a way for City Barbeque to support and promote educational opportunities for City Barbeque Teammates in their chosen field of study. Over the seventeen years it has been in place, the program has grown from supporting one Teammate each year to being able to support five scholarship winners consisting of Teammates and their families. Since the scholarship’s inception, City Barbeque has awarded 62 scholarships totaling $205,000 to Teammates and their families.
Scholarships are awarded based on character, academics and financial need and recipients are selected by an outside committee through The Columbus Foundation.

In the current service industry it’s hard to have a good experience where the customer feels like they are the actual customer and not the server. I have been to this location four times and all four times I have experienced great service and great quality. I even had someone from the kitchen open both doors for me for no reason at all. As a company that does not receive tips of gratuity, I thought it was important to let your corporation know what a great experience I’ve had. Everybody is experiencing a struggle with service due to lack of employees but I have never felt that way at this location and it’s apparent you guys must be doing something right! My experience tells me that you must treat your employees good and I hope you continue to do so because the culture that has been created is practically extinct in other restaurants.

DECATUR CROSSING

I went to City BBQ over the weekend and received excellent customer service! I also got an opportunity to chat with the general manager Tyrone Francis and he made sure all of the food was fresh and quickly prepared. I will be coming back.

Deerfield

I’ve worked in customer service at one point and retail. Your staff was extremely kind and everyone asked if I needed assistance or help. Titianna however stood out because immediately taking my order she was fun, and polite. She gave me honest suggestions and told me the food she enjoys. She’s a good employee. All of them that night were. Thank you for being good people .

Downers Grove

Our first time ordering here and we were really surprised how good the food was. Theresa, (who took my order over the phone), was very pleasant and answered all of my questions without hesitation. Thanks for a pleasant experience, haven’t had many of those lately. And… hats off to the cook!!!😃

I stopped by the drive thru with my kids on Saturday evening (9:30ish) and was feeling bad coming so close to closing time but it had been a long day and we were starving. Myles took our order and helped at the window. I cannot say enough good things about him. Myles was one of friendliest men I have ever encountered. The food was delicious but what sticks out most for us is how nice Myles was and we will definitely be back because of our experience!

Westerville

Just gotta say that Dejuan is knocking it outta the park every time. Every visit (which is quite often - when I'm in town) he is the hardest working, friendliest and most efficient person in the place. Over the top and on the ball. He has to be one of your finest managers, not that you don't have others. Everywhere you look, he's covering a task, filling something or wiping it up. One of those people we all wish there were more of!

CATERING AKRON/CLEVELAND

Our servers Taylor and Rachel went above and beyond our expectations. They were so kind and courteous. They made the experience that much better!!

Working with Abby was fantastic, from the time we went in for a tasting all the way to execution of the event. Abby was super attentive and exceeded expectations that we had for our event/experience. Lots of positive feedback from the guests on the food.

Everyone was so impressed by the food!! But not only that Tony our server was the best part of our experience! Big shout out to how nice and accommodating he was! He had nice words to say to the groom before he left which was so thoughtful! He really was a great guy and really appreciate how personal he was to our guests! So thank you so much!

The responsiveness of my catering focal, Nicole. The friendliness and professionalism of the staff who delivered and completed the set up. The staff offered advice about the flow and arrangement of tables and set up everything that led to a great event. The quality and quantity of the food was amazing. My only comment is somehow during the communication to increase our order, we did not increase our beef brisket order -- while we were disappointed we quickly ran out of the beef brisket, we did have plenty of pork and turkey available.

CATERING CHARLOTTE

The food was phenomenal! All guests were very happy and raved about the meal. Set up was excellent and the team member was thorough in labeling each item and making sure we had everything we needed. We will not hesitate to use City BBQ again!

The food was excellent. Most people who attended the event have had City Bbq before so the expectation was high for quality food. I have never ordered catering and was very pleased. Brianna was wonderful! She was so nice, helpful, and quick to serve us. I have had great food in the past with terrible servers and sadly, you tend to remember the poor service. But that was not the case with Brianna.

I loved absolutely everything about City BBQ. When we went in for our food tasting with Veneisha we instantly loved her and the staff was fantastic. Veneisha keep in touch and updated our food order, answered any and all questions. We were so happy when she came by our wedding. She talked to all of our guests as if she knew everyone there. She was absolutely fantastic and truly helped make our wedding so special! Our caterers were Angela, Kim, Jason, Jordon, Stacy & Candice and they were absolutely fantastic! All of my guests couldn’t stop talking about how awesome and friendly they all were! Every time I walked past them they told me how beautiful i looked and truly made me feel so wonderful! They truly catered our wedding with the upmost professionalism and everyone involved was truly Fantastic. Our guests are still talking about how amazing our food was! Friends of mine who had their own weddings even said the food was the best they ever had at a Wedding! The day was so smooth and I was not inconvenienced once! I will always cater with City BBQ for events!!!! I loved everyone who from City BBQ who took part in mine and my husbands day! (They even made mine and my husbands plates and walked them to our table for us) I would give them all a million stars!!!! Thank you all so much again!!! I even asked them to take a picture with me (Veneisha, Angela, Kim, Jason, Jordon, Stacy and Candice) so I can have them in my photo album because they made my experience that amazing!!!

CATERING CINCINNATI/NO KENTUCKY

Ted Simpson was great to work with during the ordering process. We had lots of changes and he was flexible, friendly and helpful throughout. The day-of team (Christian, Andrea and Shelly) were terrific - very guest-oriented, looked professional, and great representatives of City Barbecue!

Ted Simpson was my contact with City BBQ and his professional and friendly customer service was the reason I selected City BBQ for this event. He responded to all my questions and concerns in a very timely manner and helped me with the menu selection. I did not receive this level of service from the other caterers we were considering. I thought the costs were appropriate as well. And everyone thought the food was awesome. The staff that came to set up and help serve were very friendly, helpful and professional.

Everything was perfect – as it always is with you guys catering! We have had the pleasure to work with Stephen many times. He is always so friendly, on-time and does a great job w/ all the small details making sure everything is perfect. In current times, its hard to find excellent customer service, so that makes us appreciate City BBQ all the more!

Hilary and Brenden delivered the food. They were very professional and courteous. They explained where the items were that we needed to replenish and marked them so that everything was easy to find. Everything was set up and ready to go by our event time. It was a pleasure to work with you all!

Everything about the process was easy and professional. Kim Minton was extremely accommodating and communication was quick and easy. The staff member who delivered and set up was friendly and efficient.(sorry I don’t recall her name) The food was prepared well and setup nicely. My guests were very complimentary about the quality of the meal. I would use City Barbeque again in a heartbeat.

CATERING COLUMBUS

The catering staff was absolutely wonderful. They went out of their way to make sure everyone was served and the bride and groom were attended to by personally making our plates. They helped with boxing up the food that remained at the end of the reception and made sure our patio was returned to the state it was in when they arrived. They were so kind and helpful to all of our wedding guests and we wouldn't hesistate to order City Barbeque's catering service again.

From the first call to Cardinal Shooting Center to speaking with Randy. Randy make you feel like you've known him for years. The food was great and the set up was convenient for our group. We had a beautiful day. Thank you to Randy and team for making our event special.

The best part was connecting with Randy. This was our first time planning an event as we are a new staff at OSU. Meeting Randy when he delivered our boxed meals to the worksite. It's good knowing that he has been there before and can get around. His positive energy is refreshing in making this delivery happen. We were originally told by someone that you were too busy but Randy made it happen.

The process from start to finish was seamless overall. Randy did a great job communicating throughout and providing the necessary documentation to get City Barbeque into our procurement system. The team the day of the event arrived right at the time we requested. The event was held outside and it started to sprinkle so they asked what my preference was in terms of having the food set-up at the time as requested or hold off to let the sprinkles pass, which I appreciated their flexibility. Throughout the event, they ensured all the items were stocked for the guests. The tear down and clean up was spectacular and the team was very accommodating with boxing up the leftover food. Overall an excellent experience from start to finish.

Flavor and food texture was perfect Confidence in Steve Brown and his team. They always come through.

Rose and Jeff! They were polite, friendly, professional and knowledgeable. Rose communicated with us early and coordinated arrival and set-up plans. She offered excellent ideas and suggestions to keep the operation safe and efficient. Rose and Jeff worked well as a team and provided a fantastic experience for everyone present at this moderately high attendance event. We will request this team by name in the future! Five-stars all the way!

Amazing catering experience. I would highly recommend!! City Barbeque made a very busy, full event an easy dinner option that exceeded everyone's expectations and left our attendees very happy and satisfied. The staff was very friendly and efficient. A staff member even packed up a box for the bride and groom.

The process was so easy and enjoyable! From our initial tasting up until the day of our wedding, we felt confident that we were in good hands. The team was very thorough and were always quick to respond to questions that we had. They worked very well coordinating with our venue and other vendors to ensure that the evening ran smoothly. We have always been fans of City BBQ and we got SO MANY compliments about how great the food and service was! We had a large wedding and the service could not have gone smoother. People got through the line fast, the food was hot, and our buffet set up looked spectacular. We had some leftovers that were packed up for us by their team at the end of the night and we used it to feed our out of town guests the next morning! I would HIGHLY recommend their catering services to anyone looking for a friendly and talented team that provides spectacular service and great food for their event! They well surpassed our expectations!

The food was amazing! We got so many compliments through the night. Our server cleaned up and packed up the leftovers for us which was amazing. I would 12/10 recommend city bbq!

My entire experience with City Barbeque catering for our event was flawless! Ashley- Catering specialist- was awesome! She was so friendly and when meeting with me, she answered all of my questions, made great suggestions, and made the entire ordering/planning process easy. The servers on the day of the event- Gretchen and Mya- were timely, professional, organized, and so friendly. The full service open house style buffet looked great and appetizing from start to finish. Many guests commented on how tasty the food was and how nice the set up looked. Both Gretchen and Mya communicated with me throughout the event and made sure I was comfortable with everything. My venue was spotless after they dismantled the buffet and collected the trash. I could not have been more pleased with how the catering worked out! Please forward my thanks, again, to Ashley, Gretchen, and Mya for a job well done!

The food was incredible, the set up was perfect. Sarah, Paige, Aleah, and Dan made sure everything went off without a hitch and they did amazing. I can’t tell you how many times that night I heard, “this is the best wedding food I have ever had!”

CATERING GRAND RAPIDS

The caters that were in attendance at our wedding were very professional and kind. They made sure everyone was happy and they were on top of replacing all the food. The food itself was delicious as well.

The food was excellent and our guests raved about the food. We also loved that it was served in cast iron. Someone from City Barbecue even came to speak with us personally at the head table, which was a nice touch that spoke to your teams professionalism.

Your website is easy to navigate, we had great communication with your staff, on time delivery and set up and food is always amazing! You all thought of everything in order to execute a successful event - from plates, napkins and silverware, to variety of bbq sauces, serving utensils, serving trays and burners, pickles and jalapenos to extra serving utensils. And everything was included in the price and not as an additional charge like many other companies, well done City Barbeque!

So efficient, so friendly, so prepared. I didn’t even see them pack up and leave. Everything was boxed and put away. It was amazing.

The delivery guy Aaron was super funny and kind. Knew what he was doing, training another. Very friendly and professional!

My catering experience was fantastic. Kim was so nice and easy to work with. The food was great and looked so nice. We had lots of compliments from our guest. The two girls that they sent to set up and work were awesome. So friendly, nice and helpful to all our guest!

The service was incredible. Antonia was amazing from the time we went to our tasting. She went above and beyond. The whole staff who came with to the wedding was incredibly kind and sweet! Even to our dogs! The set up was gorgeous. We got the all inclusive package and our mason jars came out so cute! The food was unbelievable. Exceeded our expectations!

It was not difficult to place my order. Jesika Woody is good at her job. I really would like to thank her for handling our needs so thank you. Everything was ok we could have gotten 2 pans of Mac/Cheese instead of that coleslaw no one ate the slaw.
